Yogurt Grilled Chicken with Pickled Cucumber Salad

For my lunch today I recreated Donal Skehan’s Yogurt Grilled Chicken with Pickled Cucumber Salad and Grilled Broccoli. It is a delicious dish marinated with Indian spices and chargrilled over a hot griddle pan giving a smokey barbeque flavour and is served with some chargrilled broccoli and pickled cucumber salad . The pickled cucumber salad and chicken can be prepared and marinated overnight. This is an easy dish to be made on an outdoor Sunday barbeque over the flames and you can serve the grilled chicken with some rotis and yogurt on the side along with broccoli and pickled cucumber, it would be a winning dish.

Ingredients:

  1. Chicken Thighs, deboned: 8
  2. Broccoli: 250 gm
  3. Sunflower Oil: 1-2 tbsp
  4. Salt and Pepper to taste

For the marinade:

  1. Garlic Cloves, crushed: 3 large sized
  2. Ginger, grated or crushed: 1 tbsp
  3. Cumin Powder: 1 tsp
  4. Coriander Powder: 2 tsp
  5. Garam Masala: 2 tsp
  6. Chilli Powder/ Hot Paprika: 1 1/2 tsp
  7. Turmeric Powder: 1 tsp
  8. Sunflower Oil: 2 tbsp
  9. Yogurt: 200 ml
  10. Salt and Pepper to taste

For the pickled cucumber salad:

  1. Cucumber, thinly sliced: 1
  2. Apple Cider Vinegar: 4 tbsp
  3. Caster Sugar: 2 tbsp
  4. Salt: 1 tbsp
  5. Onion, thinly sliced: 1 small

Method:

  1. To make the marinade, mix ginger, garlic, cumin powder, coriander powder, turmeric powder, chilli powder, garam masala, oil and yogurt in a large bowl and add salt and pepper as required.
  2. Add chicken to the mix and leave to marinate for atleast 4 hours or overnight in the fridge.
  3. For the cucumber pickle, in a bowl mix together sugar and apple cider vinegar until the sugar dissolves. Mix in the salt, sliced onion and thinly sliced cucumber. Cover and leave in the fridge for atleast 2 hours or overnight.
  4. On a griddle pan or BBQ on high, cook the chicken skinside down for 6-8 minutes either side until cooked all the way through.
  5. Once the chicken is cooking, add broccoli to a small mixing bowl and toss in oil to coat and season generously with salt and pepper powder. When the chicken is cooked, add the broccoli to the pan or grill and cook for 6 minutes, turning regularly until tender.
  6. Arrange the chicken pieces on a serving platter with charred broccoli and cucumber slices.
