Today I recreated Jamie Oliver’s Crispy Garlicky Chicken. This recipe requires only five ingredients and is so easy to make but tastes delicious. Most of the ingredients are the ones that we have in our fridge and its the pairing of these ingredients that makes it so tasty and perfect.
Prep Time: 30 mins
Skinless Chicken Breasts: 2
Breadcrumbs: 150 gm
Garlic: 2 cloves
Salt and Pepper to taste
Rocket Leaves: 50 gm
Sunflower or Olive Oil: 2-3 tablespoons
Place the chicken breasts between two large sheets of greaseproof or baking paper and whack it with a roti roller to flatten them to about 1.5 cm thick.
Add 3-4 teaspoons of breadcrumb in a mixer along with the garlic cloves and blitz till the garlic is crushed. Add this to the rest of the breadcrumbs and mix well till combined. Add a spoon of salt and pepper to the breadcrumbs and mix again.
Roughly pat the breadcrumbs into each sides of the chicken and re-cover with the baking sheet and whack again till the crumbs are sticked to the chicken and to flatten them further.
Place a pan on a medium heat. Fry the crumbed chicken in 2-3 tablespoon of oil for 3 minutes on each side, or until crisp, golden and cooked through.
Slice into strips and season again if needed and plate up with some lemon-dressed rocket leaves and lemon wedges for squeezing over.
