Vanilla Cupcake With Buttercream Frosting

Of all the recipes that I’ve posted this one is my most favourite because it is very simple and very easy to make and looks gorgeous. This vanilla cupcake recipe is the most foolproof one and getting it wrong is really hard. I have used a vanilla buttercream frosting on the cupcake which you can easily prepare if you have an electric mixer.

Yields: 12 cupcakes


For Vanilla Cupcake:

  1. Flour: 125 g
  2. Caster Sugar: 125 g
  3. Soda Bicarb: 1/4 tsp
  4. Unsalted Butter (at room temperature): 125 g
  5. Eggs: 2
  6. Vanilla Extract: 1/4 tsp
  7. Milk: 1 tbsp

For Vanilla Buttercream:

  1. Unsalted Butter (at room temperature): 150 g
  2. Powdered Sugar: 340 g
  3. Vanilla Extract: 1/4 tsp
  4. Milk: 2-3 tbsp
  5. Gel Food Colouring (any colour): 2 drops


For Vanilla Cupcake:

  1. In a mixing bowl sieve in flour, caster sugar and soda bicarb. Add in 2 eggs and butter at room temperature and whisk until well combined. If you are using an electric or stand mixture, start on a low speed on a paddle attachment and increase speed at medium to high and mix for a minute.
  2. Add 1 tbsp of milk and 1/4 tsp vanilla extract and mix again until combined.
  3. Line a cupcake tray with liners and fill 2/3rd of the mould with batter.
  4. Bake the cupcakes in a preheated oven at 170 degrees for 22 mins.

For Vanilla Buttercream Frosting:

  1. Beat 150 g soft unsalted butter using an electric mixer or stand mixer (using paddle attachment) for 5 minutes.
  2. Sift 340 gms of powdered sugar and add half of it to the butter and mix on a low speed till combined with butter. Add the rest and mix on a low speed. Gradually increase the speed to medium to high and keep beating for 3-5 minutes.
  3. Add 1/4 tsp of vanilla extract and 1 tbsp of milk and mix well. Check the consistency of the buttercream. If its too thick, add a tbsp more milk, give it a nice mix.
  4. Add the preferred colour to the buttercream and stir well till the food colouring is perfectly combined to the buttercream.
  5. Pipe the buttercream to the cupcake using a nozzle of your choice.
